
MEDFORD, Ore. (Aug. 27, 2026) — A Utah-based Korean barbecue restaurant chain has opened its first Oregon location in east Medford, with a local couple leading the brand’s entry into the state.
Cupbop Medford, at 1251 E. McAndrews Road, Suite 113, is now open, as of today, Thursday Aug. 27. The restaurant is owned by Jared and Sarah Blake, who moved to Medford in 2015 and have since raised their family in the community.
The opening marks the first Cupbop location in Oregon as the fast-casual chain continues expanding across the country. The restaurant serves Korean BBQ-inspired dishes and other Korean-style offerings in a fast-casual setting.
Sarah Blake is a Medford native who attended Oregon State University and previously worked in human resources. She and Jared met while working for Boeing in Seattle and married in 2014.
The couple has experience operating franchises. In 2021, they opened a Crumbl Cookies location in California, which they continue to operate remotely from their home in Medford.
That experience eventually led them to pursue a second franchise opportunity in their hometown.
“There is something special about opening a business in the town where you grew up and where you are now raising your own children,” Sarah Blake said. “We love Medford and the people here. Bringing Cupbop to our hometown is incredibly exciting, and we cannot wait to welcome the community through our doors.”
The Blakes said they view the restaurant as an opportunity to create local jobs and provide another gathering place for residents.
Jared Blake is involved in the community as a Cub Scout cubmaster and through his local church.
“Whether it is leading a den of Cub Scouts or serving at church, what I care about most is bringing people together,” he said. “That is exactly what we want Cupbop to be: a place where neighbors show up, share a great meal, and feel at home.”
Cupbop founder Jung Song said the company was excited to enter the Oregon market with the Blakes.
“We are absolutely thrilled to open our very first Cupbop in Oregon,” Song said. “Jared has been amazing to work with, and we are so excited to welcome him and Sarah into the Cupbop family.”
The Medford restaurant will be open from 10:30 a.m. to 9 p.m. Monday through Saturday.
